Hmm... Probably... Probably the Dark Maker from Jak 3. But then again, I've never really played any games with hard bosses.
Thinking back i have never met a boss that gave me any trubble.

Probably the emperor ing from Metroid prime 2: echoes on hard mode. That was by far the longest, slowest boss battle I've ever had, no thanks to the stupid beam ammo in that game.
I used an AR on FF4 DS, so I have no clue how hard Zeromus actually is.

If you couldn't cheat on death it would be The Great Shard which is the Final Boss you face on Fable 2.
Maybe Duon on Intense, Tabuu, isn't a problem, I beat him with two characters, but Duon of corse is easy to do over and over again.
The bosses in Phantom Hourglass are really easy.
The bosses in the Pokemon games are just showy and not hard.
Not Mr. Resetee from Animal Crossing
Not any Mario Bosses
Not any fable Bosses
Not any Starwars Battle front 2 high attack characters (Jedi Masters, Random Leaders)
Not when I was playing animal crossing for GC when I made a animal so angry the game froze.
The only one I can think of is Chuck Norris. (though I never Survived that fight)

The final boss from Zelda Future is really hard. 12 forms; the last one is 100 times the size of Link and I'm pretty sure we didn't code in his health. His body is so large that he's made up of tiles rather than having his own sprite, and the Master Sword is equal in width to his pores.
