I won't say Ganon(dorf), because he pretty much takes the cake.

I've always been fond of Dark Link, because he represents all that is unpure in Link, and beating him is Link's step in "overcoming the 'ordeal'" in the Hero's Journey formula. I guess I like the concept of conquering one's own inhibitions.

Secondly, I like Volvagia. That was an awesome, awesome battle. 'Nuff said. Twinrova was a pretty great concept as well, and the part where Link blushes when she winks at him was a nice treat.

Redeads probably amuse me the most, though. I freak out every time, but they're so cool... in a creepy, anorexic-looking way.
